Our oil: the motivation to start this project, it is the heart and soul of our work. It is our passion.
We hope that within every bottle, beyond the fruity aroma, the grassy notes and the clean, harmonious flavor you will find a bit of our story.
SEGGIANO DOP and ORGANIC DOP
The Seggiano DOP extra-virgin olive oil is one of a kind. The Olivastra Seggianese olive varietal is only grown on this part of the Monte Amiata and it produces an inimitable oil with a unique flavor. Its bouquet is intense but graceful, with notes of cut grass and chamomile.
The oil’s aroma doesn’t interfere with food parings, in fact, it highlights them. The flavor is delicate and suitable for unusual combinations: from a drizzle over a simple fish crudo or as the finishing touch on an intense Porcini mushroom soup or even Olivastra olive oil gelato!
The oil is bottled with single-use caps, as required by the most recent legislation, making the product suitable for restaurants.
The harvest is in October.
Each bottle is marked with the Consorzio DOP Seggiano stamp which allows for the product to be traced back to the orchard, producer and mill of provenance. This guarantees the safety and transparency of each step of the process for every single bottle.
To satisfy the requests of a growing organic market, we also produce a certified organic DOP Seggiano oil.

IGP TOSCANO
Our IGP Toscano extra-virgin olive oil has an intense aroma, a characteristic of Seggianese oils, that is rounded out by a deep smoothness. The olives, as required by the IGP Toscano regulations, come from farms throughout the region of Tuscany, the majority from the Grosseto province.
The olives, after careful evaluation and selection, are harvested either by hand or through a process of machine assisted combing or beating and processed within 24 hours.
The product is filtered immediately and cooled using inert gas (nitrogen) to reach the optimal storage temperature of 15 degrees Celsius.
This oil completes our line, highlighting the robust flavors typical of Tuscan olive oils. The mix of olives used in this oil are the principal Tuscan varieties: Leccino, Moraiolo, Pendoliono and Maurino. The percentage each variety within the final product changes yearly based on the harvest and the quality of the olives.
The harvest is typically between October and November.

ITALIANO
Our Italian extra-virgin olive oil is the base of our product line. It is a delicate, neutral-flavored oil that is suitable for everyday use. The olives are harvested by hand or through a process of machine assisted combing and beating and harvested within 48 hours. The product is then filtered and stored at 15 degrees celsius in nitrogen-cooled silos.
The harvest period is in the month of November.
